About Our Sev Tameta

The base is simple and quick — tomatoes cooked down with onion, ginger and a modest Gujarati spice mix, kept loose rather than reduced to a paste. Gujarati cooking often carries a faint sweetness against the chilli, and this dish is where that balance is easiest to taste.
